asparagus with feta

I’m convinced that I could eat asparagus every single day – I love it that much. Usually, a bit of olive oil, garlic and salt is all it needs, but I do appreciate pairing it with some salty cheese every now and then. This most recent side dish used feta and it went perfectly with some grilled salmon.

I’ve never quite understood how people can claim to not like vegetables, but I’m fairly certain it’s just because they haven’t had veggies prepared correctly…they don’t know what they are missing!

Grilled Asparagus with Feta – 2 servings

  • 1 bunch asparagus, ends snapped off
  • 1/2 Tbsp olive oil
  • 2 oz feta cheese
  • salt & pepper

Heat grill to medium. Season asparagus with olive oil, salt and pepper. Grill for about 10 minutes, depending on size. Cut into thirds and crumble feta cheese over top.

    oooh, I didn’t even think of doing that…we had fresh asparagus almost every night last week when we were in OH. We grilled it and dressed with a little evoo and roasted red pepper strips. I could eat it everyday too!

  2. I LOOOVE asparagus!! this looks awesome, and the second I can have dairy again, I will definitely make this. Ooooh and Farmer’s Market asparagus too!

  4. I was so disappointed — I found NO asparagus at the Farmer’s Market this weekend! The season can’t possibly be over!

    i love asparagus too! my husband, however, does not so i rarely cook it. he’s also not into peppers, either – what kind of vegetarian is he?!?!?

  9. You’re absolutely right; if a food isn’t prepared right, it’s just going to taste bad! I’m convinced that nearly ANYTHING can taste good with the right preparation.
