prosciutto-wrapped cod filets

Everything really is better wrapped in prosciutto, right? I have a love-hate relationship with cod. At times it seems so plain that I wonder why anyone would want to eat it and other times I crave its simplistic flavor. A favorite way to prepare is simply wrapped in a piece or two of prosciutto – it protects the fish from drying out and also imparts a nice flavor.


Pre-heat oven to 400 degrees. Spritz 2 filets with olive oil and sprinkle with pepper. (there is enough salt in the prosciutto) Wrap each piece with 2 slices of prosciutto and bake for about 15 – 20 minutes, until fish is cooked through. Serve with tartar sauce if desired.
